  • Brown sugar - 40 g

  • Cinnamon - 1/2 tsp
  • Lemon zest - 1/2 tsp
  • Salt - a pinch
  • Ground cinnamon - for garnish

Steps

  1. In a medium saucepan, combine the soy milk, brown sugar, cinnamon, lemon zest, and a pinch of salt. Heat over medium heat until warm, stirring occasionally.
  2. In a small bowl, mix the cornstarch with a few tablespoons of the warm soy milk until it forms a smooth paste.
  3. Once the soy milk mixture is heated, gradually whisk in the cornstarch paste, continuing to stir to avoid lumps.
  4. Cook the mixture over medium heat, stirring constantly, until it thickens and starts to bubble, about 5-7 minutes.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the mixture into serving dishes and let it cool to room temperature before refrigerating for at least 2 hours until set.
