- Lemon zest - 1/2 tsp

- Ground cinnamon - for garnish
Steps
- In a medium saucepan, combine the soy milk, brown sugar, cinnamon, lemon zest, and a pinch of salt. Heat over medium heat until warm, stirring occasionally.
- In a small bowl, mix the cornstarch with a few tablespoons of the warm soy milk until it forms a smooth paste.
- Once the soy milk mixture is heated, gradually whisk in the cornstarch paste, continuing to stir to avoid lumps.
- Cook the mixture over medium heat, stirring constantly, until it thickens and starts to bubble, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract.
