- Vanilla extract - 1 tsp
- Cinnamon - 1/4 tsp

Steps
- In a small bowl, mix the cornstarch with 2 tablespoons of coconut milk to create a slurry. Set aside.
- In a saucepan, combine the remaining coconut milk, instant coffee, maple syrup, vanilla extract, cinnamon, and salt. Stir well to combine.
- Place the saucepan over medium heat and cook the mixture, stirring frequently, until it begins to simmer.
- Once simmering, reduce the heat to low and slowly add the cornstarch slurry, stirring continuously until the mixture thickens, about 2-3 minutes.
- Remove from heat and pour the mixture into two serving dishes or ramekins.
- Allow the natillas to cool to room temperature, then refrigerate for at least 2 hours to set.
