- Whole milk - 500 ml
- Granulated sugar - 100 g
- Egg yolks - 2 large
- Cornstarch - 30 g
- Cinnamon stick - 1
- Vanilla extract - 1 tsp
- Salt - a pinch
- Ground cinnamon - for dusting
Steps
- In a medium saucepan, combine the whole milk, sugar, cinnamon stick, and a pinch of salt. Heat over medium heat until it begins to simmer, stirring occasionally.
- In a separate bowl, whisk the egg yolks and cornstarch together until smooth.
- Once the milk mixture is simmering, remove it from heat and slowly pour it into the egg yolk mixture while whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract. Discard the cinnamon stick.
- Pour the natillas into serving dishes and let them cool to room temperature. Then, refrigerate for at least 2 hours until set.
- Before serving, dust with ground cinnamon.
