Ingredients

  • Whole milk - 500 ml
  • Granulated sugar - 100 g
  • Egg yolks - 2 large
  • Cornstarch - 30 g
  • Cinnamon stick - 1
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Ground cinnamon - for dusting

Steps

  1. In a medium saucepan, combine the whole milk, sugar, cinnamon stick, and a pinch of salt. Heat over medium heat until it begins to simmer, stirring occasionally.
  2. In a separate bowl, whisk the egg yolks and cornstarch together until smooth.
  3. Once the milk mixture is simmering, remove it from heat and slowly pour it into the egg yolk mixture while whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon, about 5-7 minutes.
  5. Remove from heat and stir in the vanilla extract. Discard the cinnamon stick.
  6. Pour the natillas into serving dishes and let them cool to room temperature. Then, refrigerate for at least 2 hours until set.
  7. Before serving, dust with ground cinnamon.
