- Honey - 15 g

- Egg yolks - 2
- Lemon zest - 1 teaspoon
Steps
- In a medium saucepan, combine the low-fat milk and cinnamon stick. Heat over medium until it begins to simmer, then remove from heat and let it steep for 10 minutes.
- In a bowl, whisk together the egg yolks, cornstarch, honey, vanilla extract, and lemon zest until smooth.
- Remove the cinnamon stick from the milk and slowly pour the warm milk into the egg mixture, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard-like consistency (about 5-7 minutes).
- Once thickened, pour the natillas into serving dishes and let them cool to room temperature.
- Refrigerate for at least 2 hours before serving. Optionally, sprinkle with cinnamon or serve with fresh fruit.
