Ingredients

  • Vanilla extract - 5 ml
  • Cinnamon stick - 1
  • Egg yolks - 2
  • Lemon zest - 1 teaspoon

Steps

  1. In a medium saucepan, combine the low-fat milk and cinnamon stick. Heat over medium until it begins to simmer, then remove from heat and let it steep for 10 minutes.
  2. In a bowl, whisk together the egg yolks, cornstarch, honey, vanilla extract, and lemon zest until smooth.
  3. Remove the cinnamon stick from the milk and slowly pour the warm milk into the egg mixture, whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard-like consistency (about 5-7 minutes).
  5. Once thickened, pour the natillas into serving dishes and let them cool to room temperature.
  6. Refrigerate for at least 2 hours before serving. Optionally, sprinkle with cinnamon or serve with fresh fruit.
