- Baguette - 1 small (about 200g)
- Hummus - 100g
- Grilled chicken breast - 100g, sliced
- Cucumber - 1 small, sliced
- Cherry tomatoes - 100g, halved
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Feta cheese - 50g, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (392°F).
- Slice the baguette into 1.5 cm thick pieces and arrange them on a baking sheet.
- Brush each slice lightly with olive oil and sprinkle with salt and smoked paprika.
- Toast the baguette slices in the oven for about 5-7 minutes or until golden brown.
- While the bread is toasting, season the sliced grilled chicken breast with salt and pepper.
- Once the bread is toasted, spread a generous layer of hummus on each slice.
- Top half of the slices with the sliced grilled chicken and cucumber, and the other half with cherry tomatoes and crumbled feta cheese.
- Garnish the chicken montaditos with fresh parsley.
- Serve immediately while the bread is warm.
