Ingredients

  • Baguette - 1 small (about 200g)
  • Hummus - 100g
  • Grilled chicken breast - 100g, sliced
  • Cucumber - 1 small, sliced
  • Cherry tomatoes - 100g, halved
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Feta cheese - 50g, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (392°F).
  2. Slice the baguette into 1.5 cm thick pieces and arrange them on a baking sheet.
  3. Brush each slice lightly with olive oil and sprinkle with salt and smoked paprika.
  4. Toast the baguette slices in the oven for about 5-7 minutes or until golden brown.
  5. While the bread is toasting, season the sliced grilled chicken breast with salt and pepper.
  6. Once the bread is toasted, spread a generous layer of hummus on each slice.
  7. Top half of the slices with the sliced grilled chicken and cucumber, and the other half with cherry tomatoes and crumbled feta cheese.
  8. Garnish the chicken montaditos with fresh parsley.
  9. Serve immediately while the bread is warm.
