Ingredients

  • Gluten-free bread - 200 grams
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Chorizo - 100 grams, diced (ensure it's gluten-free)
  • Eggs - 4
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Cut the gluten-free bread into small cubes and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chorizo to the skillet and cook for 3-4 minutes until it starts to brown and release its oils.
  4. Stir in the diced red and green bell peppers, cooking for another 5 minutes until they soften.
  5. Add the bread cubes to the skillet and mix well to combine with the chorizo and vegetables. Cook for about 5-7 minutes, stirring occasionally, until the bread is crispy and golden.
  6. In a separate bowl, whisk the eggs with paprika, salt, and black pepper. Pour the egg mixture over the migas in the skillet.
  7. Gently stir the mixture until the eggs are cooked through and well combined with the bread and vegetables, about 3-4 minutes.
  8. Remove from heat and garnish with chopped fresh parsley before serving.
