  • cherry tomatoes - 150 grams, halved
  • paprika - 1 teaspoon
  • salt - to taste
  • black pepper - to taste
  • fresh parsley - 2 tablespoons, chopped
  • egg - 2, optional (for topping)

Steps

  1. Begin by tearing the stale bread into small pieces and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
  3. Add the diced onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
  4. Stir in the cherry tomatoes, paprika, salt, and black pepper, cooking for an additional 3-4 minutes until the tomatoes begin to soften.
  5. Reduce the heat to low and add the torn bread pieces to the skillet, stirring to combine with the vegetables and oil. Allow the mixture to cook for about 10 minutes, stirring occasionally until the bread becomes crispy.
  6. If using eggs, in a separate pan, fry or poach the eggs to your liking while the migas finish cooking.
  7. Once the migas are ready, serve hot, topped with the fried or poached eggs and garnished with fresh parsley.
