Ingredients

  • Day-old bread - 200 grams, torn into small pieces
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Chorizo (Halal) - 100 grams, diced
  • Eggs - 4, beaten
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and diced red bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  3. Stir in the diced Halal chorizo and cook for another 3 minutes until slightly crispy.
  4. Add the torn bread pieces to the skillet, stirring well to coat them in the oil and mix with other ingredients. Cook for about 5-7 minutes until the bread is crispy and golden.
  5. Season the mixture with paprika, salt, and black pepper to taste.
  6. Make a well in the center of the skillet and pour in the beaten eggs. Stir gently to mix the eggs with the bread mixture, cooking until the eggs are just set, about 3-4 minutes.
  7. Remove from heat, garnish with fresh parsley, and serve warm.
