  • Cauliflower - 300 grams, riced
  • Chorizo sausage - 100 grams, diced
  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Parsley - for garnish, chopped

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced chorizo and sauté for about 5 minutes until it starts to brown and releases its oils.
  3. Stir in the minced garlic and paprika, cooking for an additional minute until fragrant.
  4. Add the riced cauliflower to the skillet and mix well, cooking for about 10 minutes until the cauliflower is tender and starting to brown.
  5. In a separate bowl, whisk the eggs with salt and pepper.
  6. Push the cauliflower mixture to one side of the skillet and pour the eggs into the empty side, scrambling them until just set.
  7. Once the eggs are cooked, mix everything together in the skillet.
