Ingredients
- Fresh mussels - 500 grams
- Red onion - 1 small, finely chopped
- Tomato - 1 medium, diced
- Green bell pepper - 1/2, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 4 tablespoons
- Red wine vinegar - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Thoroughly clean the mussels under cold running water, scrubbing the shells to remove any debris.
- In a large pot, bring water to a boil and add the cleaned mussels. Cover and steam for about 5-7 minutes, or until the mussels open.
- Once cooked, remove the mussels from the pot and let them cool slightly. Discard any that remain closed.
- In a bowl, combine the chopped red onion, diced tomato, green bell pepper, and minced garlic.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper to create the vinaigrette.
- Add the vinaigrette to the vegetable mixture and mix well. Incorporate the chopped parsley.
- Remove the mussels from their shells, if desired, and place them in a serving dish. Spoon the vinaigrette and vegetable mixture over the mussels.
- Let the dish marinate in the refrigerator for at least 15 minutes before serving for the flavors to meld.
