- Fresh mussels - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, finely chopped
- Red bell pepper - 1/2, diced
- Tomato puree - 150 grams
- White wine (dry) - 50 ml
- Paprika - 1 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the mussels under cold water to remove any sand or grit. Discard any mussels that are open and do not close when tapped.
- In a large pot, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until translucent, about 2-3 minutes.
- Add the diced red bell pepper and cook for another 3 minutes until softened.
- Stir in the tomato puree, white wine, paprika, and chili flakes (if using). Let the mixture simmer for about 5 minutes.
- Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened up. Discard any that remain closed.
- Season with salt and black pepper to taste. Sprinkle chopped parsley on top before serving.
- Serve the mejillones hot, with a side of keto-friendly bread or cauliflower rice if desired.
