Ingredients

  • Fresh mussels - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1/2, diced
  • Tomato puree - 150 grams
  • White wine (dry) - 50 ml
  • Paprika - 1 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the mussels under cold water to remove any sand or grit. Discard any mussels that are open and do not close when tapped.
  2. In a large pot, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until translucent, about 2-3 minutes.
  3. Add the diced red bell pepper and cook for another 3 minutes until softened.
  4. Stir in the tomato puree, white wine, paprika, and chili flakes (if using). Let the mixture simmer for about 5 minutes.
  5. Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened up. Discard any that remain closed.
  6. Season with salt and black pepper to taste. Sprinkle chopped parsley on top before serving.
  7. Serve the mejillones hot, with a side of keto-friendly bread or cauliflower rice if desired.
