Mantecados are traditional Spanish crumbly cookies, perfect for enjoying with a cup of tea or coffee. This vegetarian version preserves the authentic flavors while being easy to make at home.

- All-purpose flour - 100 grams
- Almond flour - 50 grams
- Powdered sugar - 70 grams
- Vegetable oil (or olive oil) - 50 ml
- Cinnamon powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Sesame seeds - 20 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine all-purpose flour, almond flour, powdered sugar, cinnamon powder, and a pinch of salt.
- In a separate bowl, mix the vegetable oil and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry mixture, stirring until a crumbly dough forms.
- Take small portions of the dough and shape them into flat discs, about 1 cm thick.
- Place the shaped discs on a baking sheet lined with parchment paper.
- Sprinkle sesame seeds on top of each disc, pressing them lightly into the dough.
- Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool completely on a wire rack before serving.
