  • Vegetable broth - 250 ml
  • Cheddar cheese - 100 grams, grated
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, bring salted water to a boil and cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing for about 2 minutes until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until softened.
