- Cheddar cheese - 100 grams, grated
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, bring salted water to a boil and cook the macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing for about 2 minutes until fragrant.
- Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until softened.
- Stir in the diced tomato, smoked paprika, salt, and black pepper. Cook for another 3-4 minutes.
