- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 20 grams, grated (optional)
Steps
- Bring a pot of salted water to a boil and cook the macaroni pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook for about 3-4 minutes until it starts to brown and release its oils.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until the pepper is tender.
- Stir in the halved cherry tomatoes and paprika, cooking for another 2 minutes until the tomatoes start to soften.
- Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
- Combine the cooked macaroni with the chorizo and vegetable mixture, stirring well to combine. Season with salt and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
