  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 20 grams, grated (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the macaroni pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook for about 3-4 minutes until it starts to brown and release its oils.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until the pepper is tender.
  4. Stir in the halved cherry tomatoes and paprika, cooking for another 2 minutes until the tomatoes start to soften.
  5. Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
  6. Combine the cooked macaroni with the chorizo and vegetable mixture, stirring well to combine. Season with salt and black pepper to taste.
