- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat and add the diced onion. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, celery, and red bell pepper. Cook for an additional 5 minutes until the vegetables are softened.
- Stir in the rinsed lentils, vegetable broth, bay leaf, paprika, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 20 minutes, or until the lentils are tender.
- While the lentils are cooking, bring a separate pot of salted water to a boil and cook the gluten-free pasta according to package instructions, usually about 8-10 minutes. Drain and set aside.
- Once the lentils are cooked, remove the bay leaf and stir in the cooked pasta.
- Serve hot, garnished with fresh parsley.
