  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat and add the diced onion. Sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, celery, and red bell pepper. Cook for an additional 5 minutes until the vegetables are softened.
  4. Stir in the rinsed lentils, vegetable broth, bay leaf, paprika, salt, and black pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the lentils are tender.
  6. While the lentils are cooking, bring a separate pot of salted water to a boil and cook the gluten-free pasta according to package instructions, usually about 8-10 minutes. Drain and set aside.
  7. Once the lentils are cooked, remove the bay leaf and stir in the cooked pasta.
  8. Serve hot, garnished with fresh parsley.
