  • Spaghetti - 150 grams

  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 large, chopped
  • Vegetable broth - 500 ml
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for 5-7 minutes until softened.
  3. Add the chopped tomato to the pot and cook for another 3-4 minutes, stirring occasionally.
  4. Stir in the lentils, paprika, salt, and black pepper, then pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, until the lentils are tender.
  5. Meanwhile, cook the spaghetti in a separate pot according to package instructions until al dente. Drain and set aside.
  6. Once the lentils are cooked, combine the spaghetti with the lentil mixture, stirring well to coat the pasta in the sauce.
  7. Serve hot, garnished with fresh parsley.
