- Garlic - 2 cloves (minced)
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon (chopped, for garnish)
Steps
- Wash and trim the ends of the green beans, then cut them into 5 cm pieces.
- In a medium pot, bring salted water to a boil and add the green beans. Blanch for 3-4 minutes until tender but still crisp. Drain and immediately transfer to an ice bath to stop the cooking process.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the blanched green beans to the skillet and toss them in the garlic oil for about 2-3 minutes.
- Stir in the sliced almonds, salt, and black pepper, and sauté for another 2 minutes until the almonds are lightly toasted.
- Remove from heat and drizzle with lemon juice. Toss to combine.
- Serve warm, garnished with fresh chopped parsley.
