Ingredients

  • Potatoes - 400 grams
  • Olive oil - 100 ml
  • Eggs - 4 large
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped

Steps

  1. Peel the potatoes and cut them into thin slices or small cubes.
  2. Heat 80 ml of olive oil in a large frying pan over medium heat.
  3. Add the potatoes to the pan and season with salt. Fry until golden and crispy, about 15-20 minutes, stirring occasionally.
  4. Once the potatoes are cooked, remove them from the pan and place them on a paper towel to drain excess oil.
  5. In the same pan, add the remaining 20 ml of olive oil and heat over medium heat.
  6. Crack the eggs into the pan and fry to your desired doneness, seasoning with salt and pepper.
  7. To serve, place the crispy potatoes on a plate, top with the fried eggs, sprinkle with smoked paprika and fresh parsley.
