Ingredients
- Potatoes - 400 grams
- Olive oil - 100 ml
- Eggs - 4 large
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
Steps
- Peel the potatoes and cut them into thin slices or small cubes.
- Heat 80 ml of olive oil in a large frying pan over medium heat.
- Add the potatoes to the pan and season with salt. Fry until golden and crispy, about 15-20 minutes, stirring occasionally.
- Once the potatoes are cooked, remove them from the pan and place them on a paper towel to drain excess oil.
- In the same pan, add the remaining 20 ml of olive oil and heat over medium heat.
- Crack the eggs into the pan and fry to your desired doneness, seasoning with salt and pepper.
- To serve, place the crispy potatoes on a plate, top with the fried eggs, sprinkle with smoked paprika and fresh parsley.
