- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Avocado - 1, sliced
- Lettuce - 2 leaves
- Tomato - 1, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the diced red bell pepper, grated zucchini, chopped red onion, minced garlic, olive oil, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix well until combined.
- Form the mixture into two equal-sized patties.
- Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
- While the patties are baking, prepare the toppings: slice the avocado, lettuce, and tomato.
- Once the patties are cooked, assemble the burgers by placing each patty on a whole grain bun and topping with avocado, lettuce, and tomato.
