  • Zucchini - 1 small, grated

  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Avocado - 1, sliced
  • Lettuce - 2 leaves
  • Tomato - 1, sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. Add the diced red bell pepper, grated zucchini, chopped red onion, minced garlic, olive oil, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix well until combined.
  4. Form the mixture into two equal-sized patties.
  5. Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
  6. While the patties are baking, prepare the toppings: slice the avocado, lettuce, and tomato.
  7. Once the patties are cooked, assemble the burgers by placing each patty on a whole grain bun and topping with avocado, lettuce, and tomato.
