  • Black pepper - 1/4 teaspoon
  • Gluten-free burger buns - 2 pieces
  • Fresh spinach - 50 grams
  • Hummus - 4 tablespoons
  • Feta cheese - 30 grams (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and cut the zucchini, red bell pepper, and eggplant into bite-sized pieces.
  3. Peel and slice the red onion into thick rings.
  4. In a large bowl, combine the chopped vegetables with olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss well to coat the vegetables evenly.
  5. Spread the seasoned vegetables on a baking sheet lined with parchment paper.
