- Gluten-free burger buns - 2 pieces
- Fresh spinach - 50 grams
- Hummus - 4 tablespoons
- Feta cheese - 30 grams (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash and cut the zucchini, red bell pepper, and eggplant into bite-sized pieces.
- Peel and slice the red onion into thick rings.
- In a large bowl, combine the chopped vegetables with olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss well to coat the vegetables evenly.
- Spread the seasoned vegetables on a baking sheet lined with parchment paper.
