  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Oats - 50 grams (ground to flour)
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Avocado - 1 (sliced)

Steps

  1. In a mixing bowl, mash the cooked chickpeas using a fork until you have a chunky paste.
  2. Add the chopped sun-dried tomatoes, minced garlic, chopped red onion, and parsley to the bowl.
  3. Stir in the olive oil, cumin, paprika, salt, and black pepper until well combined.
  4. Gradually mix in the ground oats to bind the mixture together; adjust the amount based on the consistency.
  5. Form the mixture into two equal burger patties.
  6. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side until golden brown.
