  • Onion - 1 small, finely chopped

  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons, for frying
  • Burger buns - 2, whole grain or your choice
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Yogurt - 2 tablespoons, for sauce
  • Lemon juice - 1 teaspoon, for sauce
  • Salt and pepper - to taste, for sauce

Steps

  1. In a large bowl, combine the mashed beetroot, chickpeas, ground oats, chopped onion, minced garlic, cumin, paprika, salt, and black pepper.
  2. Add the beaten egg to the mixture and mix until well combined. If the mixture feels too wet, add a little more ground oats.
  3. Form the mixture into two patties, ensuring they are compact.
  4. Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until they are golden brown and heated through.
  5. While the patties are cooking, prepare the yogurt sauce by mixing yogurt, lemon juice, salt, and pepper in a small bowl.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add the cooked patty, top with sliced tomato and avocado, and drizzle with yogurt sauce.
  7. Cover with the top half of the bun and serve immediately.
