- Oats - 50 grams, ground

- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten
- Olive oil - 2 tablespoons, for frying
- Burger buns - 2, whole grain or your choice
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Yogurt - 2 tablespoons, for sauce
- Lemon juice - 1 teaspoon, for sauce
- Salt and pepper - to taste, for sauce
Steps
- In a large bowl, combine the mashed beetroot, chickpeas, ground oats, chopped onion, minced garlic, cumin, paprika, salt, and black pepper.
- Add the beaten egg to the mixture and mix until well combined. If the mixture feels too wet, add a little more ground oats.
- Form the mixture into two patties, ensuring they are compact.
- Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until they are golden brown and heated through.
- While the patties are cooking, prepare the yogurt sauce by mixing yogurt, lemon juice, salt, and pepper in a small bowl.
- To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add the cooked patty, top with sliced tomato and avocado, and drizzle with yogurt sauce.
- Cover with the top half of the bun and serve immediately.
