Ingredients

  • Oats - 100 grams
  • Chickpeas - 100 grams, cooked
  • Red bell pepper - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Onion - 50 grams, finely chopped
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Vegan mayo - 2 tablespoons

Steps

  1. In a saucepan, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  2. Add the red bell pepper, paprika, cumin, salt, and black pepper, and cook for another 2-3 minutes.
  3. Stir in the cooked chickpeas and oats, then pour in the vegetable broth. Mix well and bring to a boil.
  4. Reduce heat and simmer for about 10-15 minutes, stirring occasionally, until the mixture thickens into a porridge-like consistency.
  5. Remove from heat and let cool slightly before shaping into two patties.
  6. In a non-stick skillet, cook the patties on medium heat for about 4-5 minutes on each side until golden brown.
  7. Toast the burger buns lightly on the skillet.
  8. Assemble the burgers by placing a lettuce leaf on each bun, followed by the porridge patty, tomato slices, avocado, and a dollop of vegan mayo. Top with the other half of the bun and serve.
