- Oats - 100 grams
- Chickpeas - 100 grams, cooked
- Red bell pepper - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Onion - 50 grams, finely chopped
- Olive oil - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Vegan mayo - 2 tablespoons
Steps
- In a saucepan, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the red bell pepper, paprika, cumin, salt, and black pepper, and cook for another 2-3 minutes.
- Stir in the cooked chickpeas and oats, then pour in the vegetable broth. Mix well and bring to a boil.
- Reduce heat and simmer for about 10-15 minutes, stirring occasionally, until the mixture thickens into a porridge-like consistency.
- Remove from heat and let cool slightly before shaping into two patties.
- In a non-stick skillet, cook the patties on medium heat for about 4-5 minutes on each side until golden brown.
- Toast the burger buns lightly on the skillet.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the porridge patty, tomato slices, avocado, and a dollop of vegan mayo. Top with the other half of the bun and serve.
