Ingredients

  • Zucchini - 100g
  • Red bell pepper - 50g
  • Yellow bell pepper - 50g
  • Eggplant - 100g
  • Onion - 50g
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Tomato - 100g
  • Chickpeas (cooked) - 100g
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful
  • Whole grain burger buns - 2
  • Optional toppings: Avocado, lettuce, or cheese

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Dice the zucchini, red bell pepper, yellow bell pepper, eggplant, onion, and tomato into small uniform pieces.
  3. Mince the garlic.
  4. In a large bowl, combine the diced vegetables, minced garlic, olive oil, paprika, salt, and black pepper. Toss until evenly coated.
  5. Spread the vegetable mixture on a baking tray lined with parchment paper and roast in the oven for about 20 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  6. Once roasted, remove from the oven and stir in the cooked chickpeas and chopped fresh basil. Adjust seasoning if needed.
  7. While the vegetable mixture cools slightly, toast the whole grain burger buns in a pan or under the broiler until golden.
  8. Assemble the burgers by placing a generous amount of the pisto mixture on the bottom half of each bun, adding any optional toppings you desire, and then cap with the top half of the bun.
