- Zucchini - 100g
- Red bell pepper - 50g
- Yellow bell pepper - 50g
- Eggplant - 100g
- Onion - 50g
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Tomato - 100g
- Chickpeas (cooked) - 100g
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful
- Whole grain burger buns - 2
- Optional toppings: Avocado, lettuce, or cheese
Steps
- Preheat your oven to 200°C (400°F).
- Dice the zucchini, red bell pepper, yellow bell pepper, eggplant, onion, and tomato into small uniform pieces.
- Mince the garlic.
- In a large bowl, combine the diced vegetables, minced garlic, olive oil, paprika, salt, and black pepper. Toss until evenly coated.
- Spread the vegetable mixture on a baking tray lined with parchment paper and roast in the oven for about 20 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- Once roasted, remove from the oven and stir in the cooked chickpeas and chopped fresh basil. Adjust seasoning if needed.
- While the vegetable mixture cools slightly, toast the whole grain burger buns in a pan or under the broiler until golden.
- Assemble the burgers by placing a generous amount of the pisto mixture on the bottom half of each bun, adding any optional toppings you desire, and then cap with the top half of the bun.
