- Zucchini - 1 small
- Chickpeas - 1 cup, cooked

- Greek yogurt - 1/2 cup

Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove seeds, and place them cut side down on a baking sheet.
- Roast the peppers in the oven for 20 minutes or until the skin is blistered and charred.
- While the peppers are roasting, grate the zucchini and squeeze out excess moisture using a clean cloth.
- In a large mixing bowl, combine the cooked chickpeas, grated zucchini, minced garlic, cumin, paprika, salt, and black pepper.
- Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into two patties.
- Heat olive oil in a non-stick skillet over medium heat, and cook the patties for 4-5 minutes on each side until golden brown.
- In a small bowl, mix the Greek yogurt, lemon juice, and chopped parsley to create the sauce.
- Assemble the hamburguesas by placing a patty on each whole wheat bun, topping with roasted peppers, and drizzling with the yogurt sauce.
