  • Red bell pepper - 1
  • Yellow bell pepper - 1
  • Zucchini - 1 small
  • Chickpeas - 1 cup, cooked
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Greek yogurt - 1/2 cup
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove seeds, and place them cut side down on a baking sheet.
  3. Roast the peppers in the oven for 20 minutes or until the skin is blistered and charred.
  4. While the peppers are roasting, grate the zucchini and squeeze out excess moisture using a clean cloth.
  5. In a large mixing bowl, combine the cooked chickpeas, grated zucchini, minced garlic, cumin, paprika, salt, and black pepper.
  6. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  7. Form the mixture into two patties.
  8. Heat olive oil in a non-stick skillet over medium heat, and cook the patties for 4-5 minutes on each side until golden brown.
  9. In a small bowl, mix the Greek yogurt, lemon juice, and chopped parsley to create the sauce.
  10. Assemble the hamburguesas by placing a patty on each whole wheat bun, topping with roasted peppers, and drizzling with the yogurt sauce.
