- Chickpeas (cooked) - 240 grams
- Rolled oats - 50 grams
- Garlic - 2 cloves
- Fresh basil - 30 grams
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole grain burger buns - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2, sliced
- Lettuce leaves - 2
Steps
- In a food processor, combine cooked chickpeas, rolled oats, garlic, fresh basil, nutritional yeast, olive oil, lemon juice, salt, and black pepper. Blend until the mixture is well combined but still chunky.
- Form the mixture into two equal-sized patties and refrigerate for 10 minutes to firm up.
- Preheat a non-stick skillet over medium heat. Add a little olive oil and cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the whole grain burger buns in a toaster or on a pan until lightly browned.
- Assemble the burgers by placing a chickpea patty on each bun, topped with slices of tomato, cucumber, and lettuce leaves. Optionally, drizzle extra pesto or olive oil on top.
