Ingredients

  • Chickpeas (cooked) - 240 grams
  • Rolled oats - 50 grams
  • Garlic - 2 cloves
  • Fresh basil - 30 grams
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole grain burger buns - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2

Steps

  1. In a food processor, combine cooked chickpeas, rolled oats, garlic, fresh basil, nutritional yeast, olive oil, lemon juice, salt, and black pepper. Blend until the mixture is well combined but still chunky.
  2. Form the mixture into two equal-sized patties and refrigerate for 10 minutes to firm up.
  3. Preheat a non-stick skillet over medium heat. Add a little olive oil and cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
  4. While the patties are cooking, toast the whole grain burger buns in a toaster or on a pan until lightly browned.
  5. Assemble the burgers by placing a chickpea patty on each bun, topped with slices of tomato, cucumber, and lettuce leaves. Optionally, drizzle extra pesto or olive oil on top.
