  • Brioche buns - 2 pieces
  • Fresh arugula - 50 grams
  • Tomato - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Garlic - 1 clove, minced
  • Mayonnaise - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 teaspoon

Steps

  1. Preheat a skillet over medium heat.
  2. Score the skin of the duck breast in a crosshatch pattern and season both sides with salt, pepper, and paprika.
  3. Place the duck breast skin-side down in the skillet and cook for about 6-8 minutes until the skin is crispy.
  4. Flip the duck breast and cook for an additional 4-5 minutes for medium-rare, or until desired doneness. Remove from the skillet and let it rest for 5 minutes.
  5. While the duck rests, prepare the aioli by mixing mayonnaise, minced garlic, lemon juice, and a pinch of salt in a small bowl.
  6. Toast the brioche buns in the same skillet for 1-2 minutes until golden brown.
  7. Slice the duck breast thinly against the grain.
  8. Assemble the burgers by spreading the aioli on the bottom bun, adding arugula, sliced tomato, and red onion, then topping with the sliced duck breast.
  9. Cover with the top bun and serve immediately.
