Ingredients

  • Potatoes - 400 grams
  • Chickpea flour - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced
  • Aioli or vegan mayo - 2 tablespoons

Steps

  1. Peel and cut the potatoes into chunks, then boil in salted water for about 15 minutes or until tender.
  2. Drain the potatoes and mash them in a bowl until smooth.
  3. In a frying pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  4. Add the sautéed onion and garlic to the mashed potatoes, along with chickpea flour, parsley, paprika, salt, and black pepper. Mix until well combined.
  5. Form the mixture into two patties.
  6. In the same frying pan, add another tablespoon of olive oil and cook the patties for about 4-5 minutes on each side, or until golden brown.
  7. While the patties are cooking, toast the burger buns lightly.
  8. Assemble the burgers by placing a lettuce leaf on each bun, followed by the potato patty, slices of tomato, avocado, and a dollop of aioli or vegan mayo.
  9. Top with the other half of the bun and serve immediately.
