- Potatoes - 400 grams
- Chickpea flour - 50 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1, sliced
- Aioli or vegan mayo - 2 tablespoons
Steps
- Peel and cut the potatoes into chunks, then boil in salted water for about 15 minutes or until tender.
- Drain the potatoes and mash them in a bowl until smooth.
- In a frying pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the sautéed onion and garlic to the mashed potatoes, along with chickpea flour, parsley, paprika, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties.
- In the same frying pan, add another tablespoon of olive oil and cook the patties for about 4-5 minutes on each side, or until golden brown.
- While the patties are cooking, toast the burger buns lightly.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the potato patty, slices of tomato, avocado, and a dollop of aioli or vegan mayo.
- Top with the other half of the bun and serve immediately.
