- Walnuts - 100 grams
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Avocado - 1, sliced
- Red onion - 1/4, thinly sliced
- Mayonnaise or vegan alternative - 2 tablespoons
Steps
- In a food processor, pulse the walnuts until they are finely chopped but not a paste.
- In a large bowl, combine the chopped walnuts, cooked quinoa, breadcrumbs, chopped onion, minced garlic, cumin powder, smoked paprika, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties, about 2 cm thick.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the burger buns lightly on another skillet or in a toaster.
- Assemble the burgers by spreading mayonnaise on the bottom half of each bun, placing a lettuce leaf, the walnut patty, sliced tomato, avocado, and red onion on top, then closing with the bun.
- Serve immediately with your favorite side.
