Ingredients

  • Walnuts - 100 grams
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1, sliced
  • Red onion - 1/4, thinly sliced
  • Mayonnaise or vegan alternative - 2 tablespoons

Steps

  1. In a food processor, pulse the walnuts until they are finely chopped but not a paste.
  2. In a large bowl, combine the chopped walnuts, cooked quinoa, breadcrumbs, chopped onion, minced garlic, cumin powder, smoked paprika, salt, and black pepper. Mix until well combined.
  3. Form the mixture into two patties, about 2 cm thick.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, toast the burger buns lightly on another skillet or in a toaster.
  6. Assemble the burgers by spreading mayonnaise on the bottom half of each bun, placing a lettuce leaf, the walnut patty, sliced tomato, avocado, and red onion on top, then closing with the bun.
  7. Serve immediately with your favorite side.
