  • Walnuts - 100g
  • Cooked quinoa - 50g
  • Chickpeas - 100g, drained
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Smoked paprika - 1 tsp
  • Cumin - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 1 tbsp
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Vegan mayonnaise - 2 tbsp

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, combine the walnuts, cooked quinoa, chickpeas, garlic, onion, smoked paprika, cumin, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Heat the olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  5. While the patties are cooking, place the burger buns in the oven for about 5 minutes to warm them up.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a walnut patty, slices of tomato, avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun.
  7. Serve immediately with your choice of side.
