- Walnuts - 100g
- Cooked quinoa - 50g
- Chickpeas - 100g, drained
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Smoked paprika - 1 tsp
- Cumin - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 1 tbsp
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tbsp
Steps
- Preheat the oven to 180°C (350°F).
- In a food processor, combine the walnuts, cooked quinoa, chickpeas, garlic, onion, smoked paprika, cumin, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat the olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- While the patties are cooking, place the burger buns in the oven for about 5 minutes to warm them up.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a walnut patty, slices of tomato, avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun.
- Serve immediately with your choice of side.
