- Shrimp, peeled and deveined - 250 grams
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato, sliced - 1 medium
- Aioli (store-bought or homemade) - 4 tablespoons
Steps
- In a food processor, combine the shrimp, minced garlic, parsley, smoked paprika, cumin, lemon juice, olive oil, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
- Form the shrimp mixture into two patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for 4-5 minutes on each side, or until they are cooked through and golden brown.
- While the patties are cooking, toast the burger buns in a toaster or on a dry skillet until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the shrimp patty, a slice of tomato, and a generous dollop of aioli. Top with the other half of the bun.
- Serve immediately with your choice of side.
