  • Shrimp, peeled and deveined - 250 grams
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato, sliced - 1 medium
  • Aioli (store-bought or homemade) - 4 tablespoons

Steps

  1. In a food processor, combine the shrimp, minced garlic, parsley, smoked paprika, cumin, lemon juice, olive oil, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Form the shrimp mixture into two patties, about 1.5 cm thick.
  3. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for 4-5 minutes on each side, or until they are cooked through and golden brown.
  4. While the patties are cooking, toast the burger buns in a toaster or on a dry skillet until golden.
  5. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the shrimp patty, a slice of tomato, and a generous dollop of aioli. Top with the other half of the bun.
  6. Serve immediately with your choice of side.
