- Chickpeas - 100g (cooked)
- Oats - 50g
- Garlic - 1 clove (minced)
- Onion - 1 small (finely chopped)
- Fresh parsley - 2 tablespoons (chopped)
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Smoked paprika - 1/2 teaspoon
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium (sliced)
- Avocado - 1 (sliced)
- Vegan mayonnaise - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a food processor, combine walnuts, almonds, cooked chickpeas, oats, minced garlic, chopped onion, and parsley. Pulse until the mixture is well combined but still has some texture.
- Add salt, black pepper, and smoked paprika to the mixture and pulse again until fully incorporated.
- Form the mixture into two burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown.
- Transfer the patties to a baking tray and bake in the preheated oven for an additional 10 minutes.
- While the patties are baking, prepare your burger buns by toasting them lightly if desired.
