- Red onion - 50 g (1/4 cup, finely chopped)
- Garlic - 2 cloves (minced)
- Cumin - 1 tsp
- Paprika - 1 tsp
- Chili powder - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Breadcrumbs - 50 g (1/2 cup)
- Egg - 1 (beaten)
- Olive oil - 2 tbsp
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Avocado - 1 (sliced)
- Salsa - to taste
Steps
- In a bowl, mash the cooked black beans with a fork until slightly chunky.
- Add the chopped red onion, minced garlic, cumin, paprika, chili powder, salt, black pepper, breadcrumbs, and beaten egg to the mashed beans. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until golden brown and heated through.
- While the patties are cooking, toast the burger buns in the remaining olive oil until lightly browned.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the bean patty, sliced tomato, sliced avocado, and a dollop of salsa.
