Ingredients
- Fresh spinach - 200 grams
- Canned chickpeas - 200 grams, drained and rinsed
- Breadcrumbs - 50 grams
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole wheat burger buns - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Red onion - 1/4 medium, sliced
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the fresh spinach and then sauté it in a pan over medium heat for about 3-4 minutes until wilted. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the drained chickpeas, sautéed spinach, minced garlic, cumin, paprika, and season with salt and black pepper. Mash the mixture with a fork or potato masher until mostly smooth, leaving some texture.
- Add the breadcrumbs and egg to the mixture and stir until well combined. Form the mixture into two patties.
- Heat olive oil in a non-stick pan over medium heat. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
- While the patties cook, prepare the garlic yogurt sauce by mixing Greek yogurt, lemon juice, and chopped parsley in a small bowl. Season with salt and pepper to taste.
- Toast the whole wheat burger buns lightly in the same pan or a toaster.
- Assemble the burgers by placing the spinach and chickpea patty on the bottom half of each bun. Top with sliced tomato, cucumber, and red onion. Drizzle with garlic yogurt sauce and cover with the top half of the bun.
