Ingredients

  • Asparagus - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Oats - 50 grams
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole grain burger buns - 2
  • Fresh arugula - 1 cup
  • Tomato - 1, sliced
  • Red onion - 1/2, thinly sliced

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Trim the ends of the asparagus and toss them in 1 tablespoon of olive oil, salt, and pepper. Grill the asparagus for about 5-7 minutes, turning occasionally until tender and slightly charred. Remove and set aside.
  3. In a food processor, combine the chickpeas, oats, minced garlic, paprika, cumin, salt, black pepper, and lemon juice. Pulse until the mixture is well combined but still has some texture.
  4. Form the chickpea mixture into two patties. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  5. Toast the burger buns on the grill or in the skillet until lightly crisp.
  6. Assemble the burgers by placing a chickpea patty on each bun, topping with grilled asparagus, fresh arugula, tomato slices, and red onion.
  7. Serve immediately and enjoy your Hamburguesa de Espárragos!
