- Vegetable broth - 250 ml
- Chickpeas (canned, drained) - 100 grams
- Red bell pepper (finely chopped) - 50 grams
- Zucchini (grated) - 50 grams
- Garlic (minced) - 2 cloves
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Whole grain burger buns - 2
- Lettuce leaves - for serving
- Tomato slices - for serving
- Avocado (sliced) - for serving
Steps
- In a saucepan, bring the vegetable broth to a boil. Add the couscous, stir, and cover. Remove from heat and let it sit for 5 minutes.
- In a mixing bowl, combine the drained chickpeas, chopped red bell pepper, grated zucchini, minced garlic, cumin, paprika, chili powder, and fresh parsley. Mash lightly with a fork until combined but still chunky.
- Fluff the couscous with a fork and add it to the chickpea mixture. Season with salt and black pepper to taste. Mix well until fully combined.
- Form the mixture into two patties, pressing them firmly to hold their shape.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add the couscous patties, top with tomato slices and avocado, and finish with the top half of the bun.
