  • Chickpeas (canned, drained) - 100 grams
  • Red bell pepper (finely chopped) - 50 grams
  • Zucchini (grated) - 50 grams
  • Garlic (minced) - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Whole grain burger buns - 2
  • Lettuce leaves - for serving
  • Tomato slices - for serving
  • Avocado (sliced) - for serving

Steps

  1. In a saucepan, bring the vegetable broth to a boil. Add the couscous, stir, and cover. Remove from heat and let it sit for 5 minutes.
  2. In a mixing bowl, combine the drained chickpeas, chopped red bell pepper, grated zucchini, minced garlic, cumin, paprika, chili powder, and fresh parsley. Mash lightly with a fork until combined but still chunky.
  3. Fluff the couscous with a fork and add it to the chickpea mixture. Season with salt and black pepper to taste. Mix well until fully combined.
  4. Form the mixture into two patties, pressing them firmly to hold their shape.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add the couscous patties, top with tomato slices and avocado, and finish with the top half of the bun.
