Ingredients

  • Chickpeas - 200 grams (cooked)
  • Sweet potato - 150 grams (cooked and mashed)
  • Onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Curry powder - 1 tablespoon
  • Cilantro - 2 tablespoons (chopped)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Bread crumbs - 50 grams
  • Burger buns - 2
  • Avocado - 1 (sliced)
  • Mango chutney - 4 tablespoons

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
  2. In a mixing bowl, combine the cooked chickpeas, mashed sweet potato, sautéed onion and garlic, curry powder, cilantro, salt, and black pepper. Mix well until combined.
  3. Add the bread crumbs to the mixture and stir until the mixture holds together. If it's too wet, add more bread crumbs as needed.
  4. Form the mixture into two patties.
  5. Heat a non-stick skillet over medium heat, and cook the patties for about 5 minutes on each side, or until golden brown.
  6. To assemble, place each patty on a burger bun, top with sliced avocado and a generous spoonful of mango chutney.
  7. Serve immediately and enjoy your Hamburguesa de Curry!
