Ingredients
- Chickpeas - 200 grams (cooked)
- Sweet potato - 150 grams (cooked and mashed)
- Onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Curry powder - 1 tablespoon
- Cilantro - 2 tablespoons (chopped)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Bread crumbs - 50 grams
- Burger buns - 2
- Avocado - 1 (sliced)
- Mango chutney - 4 tablespoons
Steps
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- In a mixing bowl, combine the cooked chickpeas, mashed sweet potato, sautéed onion and garlic, curry powder, cilantro, salt, and black pepper. Mix well until combined.
- Add the bread crumbs to the mixture and stir until the mixture holds together. If it's too wet, add more bread crumbs as needed.
- Form the mixture into two patties.
- Heat a non-stick skillet over medium heat, and cook the patties for about 5 minutes on each side, or until golden brown.
- To assemble, place each patty on a burger bun, top with sliced avocado and a generous spoonful of mango chutney.
- Serve immediately and enjoy your Hamburguesa de Curry!
