- Garlic - 2 cloves, minced
- Breadcrumbs - 60 grams (1/2 cup)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Sugar - 1 teaspoon
- Burger buns - 2
- Fresh spinach - 60 grams (1 cup, packed)
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and cook for about 10 minutes, stirring occasionally until they soften.
- Add the sugar and continue to cook the onions for another 5-10 minutes until they are caramelized and golden brown. Remove from heat and set aside.
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add minced garlic, breadcrumbs, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties of equal size.
- In the same skillet, add another tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, toast the burger buns in another skillet or toaster until lightly browned.
- Assemble the burgers by placing a spinach leaf on each bun, followed by the chickpea patty, caramelized onions, a slice of tomato, and avocado. Top with the other half of the bun.
