  • Chickpeas - 200 grams (cooked)
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Breadcrumbs - 50 grams
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2 (vegan)
  • Lettuce - 2 leaves
  • Tomato - 1 medium (sliced)
  • Avocado - 1/2 (sliced)
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until caramelized, about 10-12 minutes, stirring occasionally.
  2. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
  3. Add the caramelized onions, minced garlic, breadcrumbs, smoked paprika, cumin, salt, and black pepper to the mashed chickpeas. Mix well until combined.
  4. Form the mixture into two patties, ensuring they hold together well.
  5. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. While the patties cook, toast the burger buns lightly on another skillet or in the oven.
  7. Assemble the burgers by spreading vegan mayonnaise on the bottom bun, adding a lettuce leaf, the chickpea patty, sliced tomato, and avocado. Cap with the top bun.
