- Breadcrumbs - 50 grams
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2 (vegan)
- Lettuce - 2 leaves
- Tomato - 1 medium (sliced)
- Avocado - 1/2 (sliced)
- Vegan mayonnaise - 2 tablespoons
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until caramelized, about 10-12 minutes, stirring occasionally.
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
- Add the caramelized onions, minced garlic, breadcrumbs, smoked paprika, cumin, salt, and black pepper to the mashed chickpeas. Mix well until combined.
- Form the mixture into two patties, ensuring they hold together well.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties cook, toast the burger buns lightly on another skillet or in the oven.
- Assemble the burgers by spreading vegan mayonnaise on the bottom bun, adding a lettuce leaf, the chickpea patty, sliced tomato, and avocado. Cap with the top bun.
