  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2

  • Lettuce leaves - 2
  • Avocado - 1/2, sliced

Steps

  1. Preheat your grill or grill pan over medium heat.

  6. While the eggplant is grilling, lightly toast the whole grain burger buns on the grill for about 2-3 minutes.
  7. Assemble the burgers by placing a grilled eggplant slice on each bun, topping with sliced tomato, avocado, and a lettuce leaf.
  8. Serve immediately and enjoy your Hamburguesa de Berenjena!
