Ingredients

  • Sweet potato - 200 grams
  • Canned chickpeas - 100 grams, rinsed and drained
  • Quinoa - 50 grams, cooked
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Oats - 30 grams, ground
  • Olive oil - 1 tablespoon
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Whole grain burger buns - 2

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Peel and cut the sweet potato into cubes, then boil in salted water for about 10 minutes until tender.
  3. Drain the sweet potatoes and mash them in a bowl.
  4. In a separate bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  5. Add the mashed sweet potatoes, cooked quinoa, chopped red onion, minced garlic, cumin, paprika, salt, pepper, and ground oats to the chickpeas. Mix until well combined.
  6. Form the mixture into two patties.
  7. Heat olive oil in a skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
  8. While the patties are cooking, prepare your burger buns by lightly toasting them in the oven or on a pan.
  9. Assemble the burgers by placing a lettuce leaf on the bottom bun, adding the patty, and topping with slices of tomato and avocado.
  10. Cover with the top bun and serve immediately.
