- Canned chickpeas - 100 grams, rinsed and drained
- Quinoa - 50 grams, cooked
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Oats - 30 grams, ground
- Olive oil - 1 tablespoon
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Whole grain burger buns - 2
Steps
- Preheat your oven to 200°C (390°F).
- Peel and cut the sweet potato into cubes, then boil in salted water for about 10 minutes until tender.
- Drain the sweet potatoes and mash them in a bowl.
- In a separate bowl, mash the chickpeas with a fork, leaving some chunks for texture.
- Add the mashed sweet potatoes, cooked quinoa, chopped red onion, minced garlic, cumin, paprika, salt, pepper, and ground oats to the chickpeas. Mix until well combined.
- Form the mixture into two patties.
- Heat olive oil in a skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
- While the patties are cooking, prepare your burger buns by lightly toasting them in the oven or on a pan.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, adding the patty, and topping with slices of tomato and avocado.
- Cover with the top bun and serve immediately.
