Ingredients

  • Salted cod fillets - 200 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Avocado - 1 medium
  • Lemon juice - 1 tablespoon
  • Greek yogurt - 2 tablespoons
  • Romaine lettuce leaves - 4 large

Steps

  1. Soak the salted cod in water for 24 hours, changing the water several times to remove excess salt. After soaking, drain and pat dry.
  2. In a mixing bowl, flake the cod into small pieces and add the egg, almond flour, garlic powder, smoked paprika, chopped parsley, black pepper, and 1 tablespoon of olive oil. Mix until well combined.
  3. Form the cod mixture into two patties, ensuring they hold together well.
  4. Heat the remaining olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the avocado sauce by mashing the avocado in a bowl and mixing in lemon juice and Greek yogurt until smooth. Season with salt and pepper to taste.
  6. To assemble, place each cod patty on a romaine lettuce leaf and top with a generous dollop of avocado sauce. Optionally, add additional toppings like sliced tomatoes or cucumbers.
