- Rolled oats - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1/2, sliced
Steps
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
- In a large bowl, mash the drained red beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the sautéed onion and garlic to the mashed beans, then stir in the rolled oats, smoked paprika, cumin, salt, black pepper, and chopped parsley. Mix until combined.
- Form the mixture into two patties, about 1.5 cm thick.
- In the same skillet, cook the patties over medium heat for 5-7 minutes on each side, or until golden brown and heated through.
- Toast the whole grain burger buns lightly on a separate skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the bean patty, slices of tomato, and avocado. Top with the other half of the bun and serve immediately.
