Ingredients

  • Red beans - 400 grams (canned, drained and rinsed)
  • Rolled oats - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Avocado - 1/2, sliced

Steps

  1. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
  2. In a large bowl, mash the drained red beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. Add the sautéed onion and garlic to the mashed beans, then stir in the rolled oats, smoked paprika, cumin, salt, black pepper, and chopped parsley. Mix until combined.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. In the same skillet, cook the patties over medium heat for 5-7 minutes on each side, or until golden brown and heated through.
  6. Toast the whole grain burger buns lightly on a separate skillet or in a toaster.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the bean patty, slices of tomato, and avocado. Top with the other half of the bun and serve immediately.
