- Canned chickpeas - 240 grams, drained and rinsed
- Green olives, pitted - 100 grams, chopped
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Fresh parsley - 30 grams, chopped
- Whole wheat breadcrumbs - 50 grams
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, whole grain preferred
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Vegan mayo - 2 tablespoons
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the chopped green olives, minced garlic, red onion, parsley, breadcrumbs, ground cumin, smoked paprika, olive oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two equal-sized patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a teaspoon of olive oil. Once hot, add the patties and cook for about 4-5 minutes on each side or until golden brown.
- While the patties are cooking, toast the burger buns in a separate pan or oven until lightly golden.
- Assemble the hamburguesas by spreading vegan mayo on the bottom bun, adding a lettuce leaf, the cooked patty, and tomato slices. Top with the other half of the bun and serve hot.
