Ingredients

  • Canned chickpeas - 240 grams, drained and rinsed
  • Green olives, pitted - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Whole wheat breadcrumbs - 50 grams
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, whole grain preferred
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Vegan mayo - 2 tablespoons

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the chopped green olives, minced garlic, red onion, parsley, breadcrumbs, ground cumin, smoked paprika, olive oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two equal-sized patties, about 1.5 cm thick.
  4. Heat a non-stick skillet over medium heat and add a teaspoon of olive oil. Once hot, add the patties and cook for about 4-5 minutes on each side or until golden brown.
  5. While the patties are cooking, toast the burger buns in a separate pan or oven until lightly golden.
  6. Assemble the hamburguesas by spreading vegan mayo on the bottom bun, adding a lettuce leaf, the cooked patty, and tomato slices. Top with the other half of the bun and serve hot.
