  • Beef chuck - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 large, diced
  • Potato - 1 medium, peeled and diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 large, chopped
  • Beef broth - 500 ml
  • Paprika - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, and sauté until translucent, about 5 minutes.
  2. Add the beef cubes to the pot and brown them on all sides, approximately 8-10 minutes.
  3. Stir in the diced carrot, potato, and bell pepper, cooking for an additional 5 minutes.
  4. Add the chopped tomato, beef broth, paprika, bay leaf, salt, and black pepper to the pot. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the beef is tender.
  6. Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
