- Beef chuck - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 large, diced
- Potato - 1 medium, peeled and diced
- Bell pepper - 1 medium, diced
- Tomato - 1 large, chopped
- Beef broth - 500 ml
- Paprika - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, and sauté until translucent, about 5 minutes.
- Add the beef cubes to the pot and brown them on all sides, approximately 8-10 minutes.
- Stir in the diced carrot, potato, and bell pepper, cooking for an additional 5 minutes.
- Add the chopped tomato, beef broth, paprika, bay leaf, salt, and black pepper to the pot. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the beef is tender.
- Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
