  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the diced onion and sauté for 3-4 minutes until translucent.

  5. Add the diced carrot, celery, and red bell pepper; cook for 5-6 minutes until softened.

  9. Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
