  • Tomato (fresh or canned) - 200 grams, chopped
  • Vegetable broth - 500 ml
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced bell pepper and carrot, cooking for another 5 minutes until softened.
  4. Add the chopped tomato and cook for an additional 3 minutes, allowing the tomatoes to release their juices.
  5. Stir in the cooked chickpeas, smoked paprika, cumin, bay leaf, salt, and black pepper.
  6. Pour in the vegetable broth, bringing the mixture to a gentle simmer.
  7. Cover and let it cook for 20 minutes, stirring occasionally.
  8. Remove the bay leaf and adjust seasoning if necessary.
