  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium-high heat. Add the diced onion and sauté until translucent.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add the lamb cubes to the pot, browning them on all sides. Season with salt and pepper.
  4. Once browned, add chopped carrot, potato, red bell pepper, and tomato to the pot, stirring to combine.
  5. Sprinkle paprika and cumin over the mixture, stirring well to coat the vegetables and meat.
  6. Pour in the red wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate.
  7. Add the chicken broth and bay leaf, bringing the mixture to a boil.
  8. Reduce heat to low, cover the pot, and let the stew simmer for about 1 hour, or until the lamb is tender.
  9. Check seasoning and adjust salt and pepper as needed.
  10. Serve hot, garnished with fresh parsley.
