Steps
- Heat olive oil in a large pot over medium-high heat. Add the diced onion and sauté until translucent.

- Pour in the red wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate.
- Add the chicken broth and bay leaf, bringing the mixture to a boil.
- Reduce heat to low, cover the pot, and let the stew simmer for about 1 hour, or until the lamb is tender.
