  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 large, diced
  • Paprika - 1 teaspoon
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Chicken broth - 250 ml
  • Parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the rabbit pieces and brown them on all sides, about 5-7 minutes.
  3. Remove the rabbit from the pot and set aside.
  4. In the same pot, add the diced onion, bell pepper, and garlic, sautéing until softened, about 5 minutes.
  5. Stir in the diced zucchini and tomato, cooking for an additional 3-4 minutes.
  6. Add the paprika, thyme, rosemary, salt, and black pepper, mixing well.
  7. Return the browned rabbit to the pot and pour in the chicken broth.
  8. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes until the rabbit is tender.
  9. Taste and adjust seasoning if necessary, then serve hot, garnished with chopped parsley.
