- Zucchini - 1 medium, diced
- Tomato - 1 large, diced
- Paprika - 1 teaspoon
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Chicken broth - 250 ml
- Parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the rabbit pieces and brown them on all sides, about 5-7 minutes.
- Remove the rabbit from the pot and set aside.
- In the same pot, add the diced onion, bell pepper, and garlic, sautéing until softened, about 5 minutes.
- Stir in the diced zucchini and tomato, cooking for an additional 3-4 minutes.
- Add the paprika, thyme, rosemary, salt, and black pepper, mixing well.
- Return the browned rabbit to the pot and pour in the chicken broth.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes until the rabbit is tender.
- Taste and adjust seasoning if necessary, then serve hot, garnished with chopped parsley.
