Ingredients

  • Milk - 250 ml
  • Gluten-free cornstarch - 30 g
  • Sugar - 50 g
  • Egg yolk - 1
  • Vanilla extract - 1 tsp
  • Heavy cream - 120 ml
  • Cinnamon - 1/2 tsp
  • Gluten-free ladyfinger cookies - 4
  • Powdered sugar - for dusting

Steps

  1. In a saucepan, combine the milk, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves.
  2. In a small bowl, whisk together the cornstarch and egg yolk until smooth. Slowly add a ladle of the warm milk mixture to temper the egg yolk, stirring continuously.
  3. Pour the tempered mixture back into the saucepan with the remaining milk. Cook on low heat, stirring constantly, until the mixture thickens (about 5-7 minutes). Remove from heat and allow to cool.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cooled custard until well combined.
  5. In serving glasses, layer the bottom with crumbled gluten-free ladyfinger cookies. Spoon a layer of the custard mixture over the cookies, then repeat with another layer of cookies and custard.
  6. Dust the top with powdered sugar and sprinkle with cinnamon. Refrigerate for at least 1 hour before serving.
