- Milk - 250 ml
- Gluten-free cornstarch - 30 g
- Sugar - 50 g
- Egg yolk - 1
- Vanilla extract - 1 tsp
- Heavy cream - 120 ml
- Cinnamon - 1/2 tsp
- Gluten-free ladyfinger cookies - 4
- Powdered sugar - for dusting
Steps
- In a saucepan, combine the milk, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves.
- In a small bowl, whisk together the cornstarch and egg yolk until smooth. Slowly add a ladle of the warm milk mixture to temper the egg yolk, stirring continuously.
- Pour the tempered mixture back into the saucepan with the remaining milk. Cook on low heat, stirring constantly, until the mixture thickens (about 5-7 minutes). Remove from heat and allow to cool.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cooled custard until well combined.
- In serving glasses, layer the bottom with crumbled gluten-free ladyfinger cookies. Spoon a layer of the custard mixture over the cookies, then repeat with another layer of cookies and custard.
- Dust the top with powdered sugar and sprinkle with cinnamon. Refrigerate for at least 1 hour before serving.
